These beers will be available year round
This knockout of a beer is so named for the hop additions that give this great drinking ale that American twist. Four rounds of hops are added to the boil w/the last at the knockout. A rich, creamy ale fermented at cool temperatures has a clean finish w/hints of citrus. Medium-light bodied & ideally balanced for all tastes; make this a perfect beer when you want more. Fourth Round’s tempting light golden color, biscuit aroma, & smoothness go down effortlessly & often! Or maybe just four rounds.
Our Cream Ale is brewed in the American brewing tradition of balancing the malt complexity. It is slightly sweet with a creamy mouth feel. The refreshing body has a crisp, clean finish and is a bit fruity and satisfying, perfect for those summer days whether it be on the river, by the pool or just soaking in the sun.
A Honey and Rye-forward farmhouse ale, this warm weather brew is just what you've been looking for. A touch of honey on the nose tangles with the aromas of the Belgian yeast. There is a mild sweetness from the local Pacific Northwest Blackberry and Clover Honey that blends seamlessly with the malted rye. A dry finish is complimented by the subtle spicy notes that linger and round out with hints of faint fruity-esters to create a crisp and refreshing saison.
Oxen are typically used for the heavier farm work being one of the stronger types of cattle; we imagine after a long day, our Oxbow would want to settle in for the night w/a nice hop forward beer like this one. Our Oxbow IPA is medium bodied & aggressively hopped w/a technique called “whirlpool” hopping which adds a nice delicate citrusy aroma & flavor. We also use a combo of Citra & Ekuanot in our dry hopping for a tropical fruit bouquet & to get a well-balanced, very drinkable American IPA.
Our milk stout offers all of the chocolate and roasted notes that you would expect from a stout. Aromas of dried dark cherry, vanilla, and coffee compliment the flavors of roasted malt & coffee, a hint of chocolate all which builds the foundation of this creamy stout. There’s enough distinctive malt sweetness to round out the bitterness of this stout & it finishes like it got a dollop of whip cream. The addition of lactose produces a medium-full body, thick, creamy head & a sweet subtle finish.
Our NW style Red Ale is a beer for people who love IPAs, but like a little malt sweetness. Malts include American two-row, crystal 120, plus a blend of Special B and Red X malt. Then we throw in Summit, Centennial, and Cascade hops to balance out the sweetness creating complex flavors for a beer that appeals to both the hop lover and non-hop lover alike.
Some cats just want to be different. When out in the country we find many types of barn cats. Some are just normal cats, and then there are the ones that are different….. much like this beer. A true rebel of a beer style, for the misfit in all of us. This dark lager has notes of roast chocolate, but unlike a porter or a stout it’s light and easy to drink. Very refreshing and soul lifting, it is great beer for the spring and summer when you want greater depth of flavor in your beer.
Smooth with an earth complexity, our Porter pours a deep dark brown with a creamy tan foam. Its malt bill is a testament to notes of bittersweet chocolate, coffee, and a roasted finish. This beer remains robust while having a refreshing character that goes down great after a long day on the cattle drive. ‘Head ’em up! Move ’em out!’

This traditional Belgian Style Ale w/ coriander, orange peel & Belgian malts, is complimented by a combo of sweet & tart cherries. With an aroma of fresh sour cherries, the tartness dances w/your taste buds & finishes dry w/hints of wine, cider & an enduring cherry fruitiness. The cherry is added during fermentation creating a delicate & refreshing flavor. So, whether you are at home or sunbathing w/the Corse cows on the island of Corsica, each sip will have you saying it’s “Cherries of Corse”.
Inspired by the brisk winter nights on the farm, we created this saison with the many shades of winter in mind. It begins with aromas of roasted toffee, with a touch of espresso to back it up. Using a combination of light and dark wheats, in addition to Abbey-style malts you get a medium bodied dark farmhouse ale with roasted notes of dark stone fruit, coffee, molasses, and a hint of cocoa in the background. It has a dry finish & is warming to the palate. It will pair well with any holiday meal!
